Carrot Cake Muffins
(makes 12 servings)
1 1/2 C Whole wheat flour
1t Baking soda
1tb Baking powder
1t Ground cinnamon
1/4ts Ground nutmeg
1/4ts Ground ginger
1 Egg
2tb Vegetable oil
1/4C Raisins
1/4C Chopped walnuts
1/3C Lowfat milk
8oz Can uns. crushed pineapple
1 1/2C Grated carrots
Combine the dry ingredients in a bowl. Add
the remaining ingredients and stir to blend. Spoon into oiled muffin tins
or paper muffin cups. Bake at 350 F for 20 to 25 minutes.

Baking Powder Biscuits
(makes 6 servings)
1 cup flour
2 t baking powder
1/4 t salt
3 T. Butter 1/3 cup milk or buttermilk
Sift together dry ingredients. Cut butter in with
fork to form pea size pieces. Add milk. Stir to form dough. Roll out slightly.
Cut 2" biscuits. Place on baking sheet and bake in preheated 425 oven for
12 minutes.

Great Garlic Bread
3 secrets to great garlic bread are: wonderful,
dense county or peasant bread, fresh garlic and fabulous extra virgin olive
oil.
Toast bread and rub the entire surface gently with
half a clove of fresh garlic. Drizzle a small amount (1/2 t.) of oil over
the bread and savor the moment.
