Chicken Adobo
(makes 4 servings)
4 5 oz chicken breasts halves skinned, and boneless
2 large crushed cloves of garlic
1 medium onion, chopped
1/2 cup rice vinegar
1/4 cup low sodium soy sauce
2 bay leaves
1/4 cup water
1 tsp sugar
1/8 tsp fresh black pepper, ground
Rinse chicken pieces and place in large pot. Add
all other
remaining ingredients, and pour over chicken to
cover. Cover the pot
and simmer for 1 hour or until the chicken is very
tender. Remove the
bay leaves and serve with a small amount of marinade.

Sour Cream Chicken
(makes 6 servings)
6 boneless skinless chicken breasts
12 pieces bacon
2 cup sour cream
1/4 cup heavy cream
4 tbsp soy sauce
1/4 tsp ground ginger
1 salt, to taste
1 freshly-ground black pepper, to taste
3 tbsp butter
Preheat oven to 325 degrees.
Melt butter and distribute across the bottom and
sides of a Corning or
Pyrex casserole dish. Lightly fry bacon until partially
done -- not crisp.
Wrap two pieces of pliable bacon around each chicken
breast and arrange
them in the baking dish.
In small bowl mix sour cream, cream, soy sauce,
and ginger. Pour over
chicken, salt and pepper top as you like, and bake
in 325 degree oven for
two hours –– the first hour foil or lid-covered
and then uncover for the
second half of the cooking time.
4 carb grams per serving.

Crockpot Chicken
(makes 6 servings)
6 chicken breasts no bone, no skin
Salt & Pepper to taste
1 can cream of mushroom Soup
2 Tbsp melted butter
2 Tbsp DRY Italian Dressing
6 oz. cream cheese
1 Tbsp. finely chopped onion
Brush the chicken with the melted butter. Sprinkle
with salt & pepper. Place in the crockpot. Srinkle with the dressing
mix. Cover and cook on high for one hour then turn to low for 3 to 4 more
hours.
About 45 minutes before serving, mix the soup, cream
cheese, and onion. Cook over low heat til smooth and heated through. Pour
over the chicken in the crock pot. Continue to cook for 1 hour on low.
