Light Caesar Dressing

1/2 cup non-fat yogurt 
1/4 cup fat-free or low-fat mayonnaise 
1 clove garlic, crushed 
1/4 cup grated Parmesan cheese 
1/2 teaspoon Worcestershire sauce 
2 tablespoons lemon juice (to taste) 
3/4 teaspoon salt (to taste) 
Freshly ground pepper, to taste 

Combine all ingredients and mix well; chill. 
Dressing will keep 4-5 days in the refrigerator.

Tatar Sauce

1/2 cup  Plain Yogurt, low fat 
1/4 cup  Pickles, finely chopped 
1/4 cup  Celery, finely chopped 
2 tbsp  Green onions, finely chopped 
1 clove  Garlic, minced 

Mix all ingredients and refrigerate immediately.

Alfredo Sauce
(makes 4 servings)

6 tablespoons unsalted butter
2/3 cup heavy cream
1 cup Parmesan cheese - freshly grated
1/2 teaspoon salt
Ground white pepper
Dash of ground nutmeg 

Place butter and cream in large skillet over medium-low heat. Cook and stir until butter melts and mixture bubbles; cook and stir two minutes more. Stir in salt, pepper and nutmeg. Remove from heat. Gradually stir in cheese until thoroughly blended and smooth. Return briefly to heat to completely blend cheese, but do not let sauce bubble or cheese will become lumpy and tough. 

Recipe makes four servings; 1.9 grams of carbohydrate per serving.
