Down Home BBQ Beef
(makes 4 servings)
1 slice bacon
1/2 cup chopped onion
1/2 cup ketchup
1/2 cup apple juice
1 tablespoon white vinegar
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1/8 teaspoon salt
1/8 teaspoon ground black pepper
2-1/2 teaspoons Equal® for Recipes or 8 packets
Equal® sweetener
or 1/3 cup Equal® Spoonful™
12 ounces thinly sliced roast beef
4 kaiser rolls (optional)
Cut bacon into 1-inch pieces; cook in medium saucepan
over medium-high heat 3 to 4 minutes or until almost
cooked.
Add onion; cook 3 to 5 minutes or until bacon is
crisp
and onion is tender, stirring occasionally.
Combine ketchup, apple juice, vinegar, mustard ,
Worcestershire sauce, salt and pepper; add to bacon
mixture.
Reduce heat; cover and simmer until flavors are
blended, 15 to 20 minutes.
Stir in Equal® and sliced beef. Serve warm on
rolls, if desired.

Saucy Flank Steak Sandwiches
(makes 8 servings)
1 (1 1/2-pound) lean flank steak
1 cup reduced-calorie ketchup
1/4 cup red wine vinegar
2 tablespoons light-colored corn syrup
1 tablespoon prepared mustard
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
Cooking spray
8 (1 1/2-ounce) hamburger buns
Ripe olives (optional)
Trim fat from steak. Combine steak and next 6 ingredients
(steak through hot sauce) in a large zip-top plastic bag. Seal bag; marinate
in refrigerator 8 hours, turning bag occasionally. Remove steak from bag,
reserving marinade.
Prepare grill or broiler. Place steak on grill rack
or broiler pan coated with cooking spray; grill or broil 8 minutes on each
side or until desired degree of doneness. Slice steak diagonally across
grain into thin strips. Set aside; keep warm.
Pour reserved marinade through a sieve into a small
microwave-safe bowl; cover with plastic wrap. Microwave at HIGH 5 minutes
or until marinade boils. Divide steak evenly among bottom halves of buns;
top each with 2 tablespoons marinade and top half of bun. Garnish with
olives, if desired.
