Bagel Pizza
(makes 2 servings)
1 4-ounce (120 g) plain bagel, cut in half
1/4 cup (60 ml) purchased Contadina pizza sauce
1 ounce (30 g) part-skim shredded mozzarella cheese
Preheat broiler. Position top oven rack 4 to 5 inches
(12.5 to 22.5 cm) below source of heat.
Spread each bagel half with 2 tablespoons (30 ml)
of the pizza sauce. Sprinkle evenly with the cheese.
Place prepared bagels on a baking sheet and broil
for 2 1/2 to 3 minutes, until cheese melts and sauce bubbles.
Remove from oven and serve to eat out of hand when
cool enough to eat.
Per serving (4-ounce bagel): 204 calories (14%
calories from fat), 10 g protein, 3 g total fat (1.6 g saturated fat),
34 g carbohydrate, 2 g dietary fiber, 8 mg cholesterol, 379 mg sodium

Potato Cheese Chips
(makes 4 servings each serving: 4 slices)
2 Medium Idaho potatoes, about 1 lb.
2 oz. Low-fat shredded cheese such as Alpine Lace,
part-skim mozzarella,
1/4 tsp Each ingredient: garlic powder, chili powder,
and dried basil
Dash pepper to taste
Wash potatoes and prick each with a fork. Wrap each
potato in microwave-safe paper towel and place end-to-end in oven. Microwave
on High for 4 to 5 minutes. Turn potatoes over and microwave on High another
4 to 5 minutes.
Unwrap, let cool, and refrigerate. When chilled,
cut into 1/4 -inch slices and top with sprinkling of cheese, a dusting
of combined spices, and dash of pepper. Line oven with paper towels and
arrange potato slices on them. Microwave for 30 to 40 seconds, just until
cheese melts. Makes 16 slices.

Pasta Chips
(makes 24 servigs)
1 pk (16 oz) Lasagna noodles
20 ts Vegetable oil
1/4 C Water
Nonstick vegetable spray
1/3 C Freshly grated Parmesan che
2 ts Basil
2 ts Oregano
2 ts Parsley flakes
1/3 ts Garlic powder
Cook noodles according to package directions, omitting
salt. Drain well. Separate noodles carefully on a flat surface.
Combine oil and water in a small bowl; stir well
and brush both sides of lasagna noodles with the mixture. Cut each noodle
crosswise into 2-inch pieces and arrange in a single layer on a baking
sheet coated with cooking spray. Set aside.
Combine Parmesan cheese, basil, oregano, parsley,
and garlic powder in
a small bowl; stir well.
Sprinkle a rounded 1/8 teaspoon of the herb mixture
over each chip.
Bake at 400 degrees F. for 16 minutes or until
crisp and golden.
Cool and store in an airtight container until ready
to serve. Makes 24
servings, approximately 12 dozen chips.
